I have a 6 yo boy, 4 yo girl, and 1 yo boy. Wednesdays are our busy days out of the house. We're gone in the morning and gone again at 5:00 for the evening. Rather than trying to cram in some math and reading in the afternoon just to say we "did school" today, I decided to let the two older ones cook lunch with me on Wednesdays. They each have their own kids cookbook (which I ordered very inexpensibly from a Pillsbury flour bag), and each gets to choose a recipe for Wednesday. My rule is that they have to take turns choosing dessert (or we'd probably have two desserts only for lunch
I've found that they enjoy cooking with me; we're doing math, reading and life skills without them knowing that we're "doing school"; and I get one-on-one time with each of them while we're making their recipe. It's also introduced us to some simple yet yummy and nutritional meals, and kids usually want to try the food they've made.
