My son has several food allergies (egg, dairy, peanut, soy) which makes breakfast *really* hard! We've done oatmeal and porridge to death and he eats too much fruit as it is (he's had three bananas today). Any suggestions?

Check out the Allergy Self-Help Cookbook by Marjorie Hurt Jones, R.N. It contains over 325 natural foods recipes, free of wheat, milk, eggs, corn, yeast, sugar and other common food allergens. I have only tried a few recipes but enjoyed them. The following is a recipe under the "breakfast" section. There are good recipes in othe sections that could be used for breakfast too.
Sweet Potato Delight
2-4 tablespoons chopped nuts or pine nuts
1 ripe banana
1 med. sweet potato, cooked
1 tsp. oil
1 tablespoon maple syrup (optional)
In a large frying pan, dry-roast the nuts over medium heat for a few minutes. SHake the pan often. Cut the banana in half lengthwise. Cut the sweet potato into 1/2" slices. Add the oil to the pan. Push the nuts to the outer edges. Place the banana pieces, flat sides down, in the pan. Add the sweet potatoes. Cover and cook for 5 min., until everything is heated through and browned on one side. Drizzle with syrup before serving. Hope this helps! Eileen

Hi, how is it going w/your son's diet? Are these all of his allergies? I believe that a few nuts like Brazil & almond make a good breakfast of protein. I also put them in fruit smoothies made w/1 cup of orange juice & 1 cup of berries that are frozen, like strawberries or mixed fruit. This is fast & easy. Just rinse out the blender immediately after blending & you don't have to have a big deal washing session later if it dries on it.
